Since my site is in Spanish, Ive got visit from all of them quite quickly:
South America: Argentina, Bolivia, Uruguay, Paraguay, Chile, Peru, Ecuador, Colombia, Venezuela.
Central America and Caribbean: Panama, Costa Rica, Nicaragua, Honduras, El Salvador, Guatemala, Cuba, Dominican Republic and maybe Puerto Rico.
North America: Mexico.
In my opinion, the hardest are Bolivia, Paraguay, Nicaragua and Cuba; but none of them is imposible.
In other parts of the world, Spanish is official in Spain and Equatorial Guinea (no visits from here yet).

@blub002: I think you had the same misunderstood that "shiam" had: We're talking about the Americas' countries... So, Eq. Guinea, Philippines and Spain do not count :B
