Would it be possible to modify the "User List" so that it is searachable by country? Or is there such a function to be found elsewhere that I haven't noticed? Thanks!

You will not find such search option currently. The only information one may provide when register is the time zone. Nobody is asking for countries, so no way to get it.
Some forum members provide their country at the "From:" section on voluntary basis. But again, no search functionality is behind that.
If you intent to see such option, I recommend to post a suggestion at the appropriate forum section.
